It’s not always easy to cook on a weeknight for me. When I am on my game of meal preparation, I am ready to take on anything. Do you have to work late today? When I’m not able to get everything together (which is more often than not, extra weeks), I turn to less-than healthy and scrambled choices. They’re not only a tasty base to this dish but are also handy to have around if you need to round out a meal. Prepare any vegetables you want to use as a topping for your flatbread in advance. I love to use corn off the cob with shallots that are pickled ahead of time and arugula. Remember to cut your avocado at the last minute. You don’t want it browning.

Why we love it: When I heard Camille was developing a recipe for 5-ingredient chicken fajitas I was counting down until the site released the recipe. Then I found out that it could be done on a sheet pan. Absolute genius. This is the recipe you should use whenever you need something quick and simple. Your family will be asking for more.

Why we love it: If you are looking for a simple, 5-ingredient recipe to help you get more greens by 2023, then this is the one. The addition of parmesan, peas, and asparagus are all boosted by the lemon and parmesan. This simple weeknight meal is a great alternative to the green smoothie.
